Recipe - Peach Green Bubble Tea

 Hello. C J here. Bubble tea kind of took Kingston, Ontario by surprise a while ago and it still popular here. There are at least a dozen bubble tea places in the city, most of them downtown with one at the mall. Here is my faithful recreation of my favourite flavour of this strange Thai tea beverage, peach green tea. If you want tapioca pearls in yours then just cook them according to the manufacturer's directions but add in some brown sugar to the water. It makes them sweeter.

Ingredients
Two Cups Hot Water (Not Boiling)
Two Green Tea Bags
Two Herbal Peach Tea Bags
One Half Cup Sugar

For the Green Tea
Heat the water to just below boiling. I do this by hand and never use a thermometer but it takes years of practice to do that so just use normal hot water. You want just below the boiling point.

Pour the water into a teapot and add the sugar and tea bags. Steep for five minutes and then remove the bags. Stir with a spoon until the sugar fully dissolves.

Serve over a lot of ice.

Strangely for a Scottish-Irish person I have a love of Japanese teas. The green tea I use here is a normal grocery store brand but I’ve tried some obscure and wonderful Japanese teas in the last several years. Matcha is still a subject of fascination and curiosity to me. You can bake with it an also drink it? What is this strangeness? I’ve tried some top shelf green teas that you steep for only a few seconds or they turn bitter. I’m still working on what my favourite is. I may never have one. I also drink coffee like a proper Scottish-Irish person. That is, full time every waking minute of every day. I like caffeine.

Hello. C J here. I read a lot of cookbooks. This is done mostly for fun. I’m currently reading a short but really interesting book about traditional Chinese cooking. Four New Recipes for January

 Hello. C J here. I've got four new recipes for everyone here. We have everything from Chinese chicken to homemade hot apple cider. Enjoy. The Emperor’s Potatoes Here we have the first food item I ever finished designing for Food of the World – Carthia. I tried three combinations of traditional Asian ingredients and pasta under the assumption that I was doing Italian-Chinese food for the book. I could not for the life of me get any of them to be exciting. They were fine. I don’t eat fine. I got bored of the pasta thing and then thought to myself, ‘what happens if I swap the pasta for another starch? What about a potato?’ It worked. Really well. Let's All Be Friends, No Really - Part Two

 Hello. C J here. I’ve updated my plans to make a Discord server for everyone here and on Facebook. Making a Discord server to my knowledge costs money. However, making a Facebook group does not. I’ve made a few of those over the years as well for various reasons. I’m going to look into this soon and then add the links here and in the menus here as well. I’m certain a Facebook group is what we need. I’m planning a number of chats within the group. So far my current plans are as follows.
